Friday night our neighbor called us and said they were having a last minute get together at their house.  Our family had been so busy with life that I had not been to the grocery store in a while.  Since I did not have much on hand I called my husband to see if he could swing by the grocery store and pick up a few items.  I wanted to kept it simple because he had our two year old with him, he only needed to pick up two ingredients.  Sorry, no picture because I wanted to rush over to the party.

Parmesan Cheese and Artichoke Dip

Ingredients

  • 2 cups shaved parmesan cheese
  • 2 cans canned artichokes in water
  • 1/2 mayonaise
  • salt and pepper
  • garlic powder – to taste

Method

1 Step 1 Drain and chop the artichokes.

2 Step 2 In a medium sided bowl stir in half of the parmesan cheese and mayonaise.

3 Step 3 Warm the mixture in the microwave for two to three minutes.  Stir the mixture to combine well.  Now add the remaining cheese, garlic, salt and pepper.

4 Step 4  Serve with sliced bread, tortillia chips, pita bread or crackers.  It could even be served with raw veggies for the carb watchers.

Final Thought, everyone at the gathering raved about the dip.  However, one person said they had it spicy before and suggested I try it.  Next time, I might add some jalapino or cayanne pepper to the dip before I serve it.

Lemongrass-Steamed Chicken Recipe

My wife was searching through a stack of cookbooks my aunt recently gave me the other day trying to decide what to make for dinner. We came across a real simple Chicken dish from The Best Recipes in the World by Mark Bittman. This is the first recipe we are trying out from this book but with a title like that you would think that this book is filled with great recipes. We decided to try out this Lemongrass-Steamed Chicken dish to see if it was as good as advertised. Best thing about it was the fact that we already had all the ingredients and did not have to go shopping.

Since lemongrass is one of my favorite Asian herbs I really enjoyed cooking and eating this chicken. It took less than 30 minutes to prepare this dish and everyone enjoyed the simple clean taste of the lemongrass.

Ingredients

Lemongrass Steamed Chicken

  • 8 chicken thighs, trimmed of excess fat
  • Salt and black pepper to taste
  • 3 tablespoons corn, grape seed, or other natural oil
  • 6 lemongrass stalks, trimmed, halved lengthwise, and smashed
  • 3 tablespoons soy sauce
  • Lime wedges for serving
  • Chopped fresh cilantro leave for garnish

Method

1 Salt and pepper the chicken to taste. Put a large skillet over medium-high heat and sprinkle the lemongrass over the skillet.
2 Place the chicken in the skillet once the lemongrass is aromatic and begins to release some of its flavor.
3 Cover your pan, baste the chicken with soy sauce and turn every few minutes until cooked thoroughly.
4 Add lime wedges and cilantro as a garnish before serving

My family enjoys eating at a locally owned Thai restaurant not too far from our home. We have been eating there for several years, but just a few days ago the owner Jez gave me a peek at the ingredients they use. It was a big deal because I have been trying to replicate my favorite entrée, Thai Green Curry Chicken, at home with no success, until now. Once I made the Thai Green Curry Chicken recipe using Mae Ploy Thai Green Curry Paste and Mae Ploy Coconut Milk the dish turned out as delicious as it always is at the restaurant. The package for the Thai Green Curry Paste has directions, however I make the recipe as the restaurant owner suggested.

Thai Green Curry Chicken Recipe

When planning to serve rice with this recipe it is best to put the rice on before beginning the Thai Green Curry Recipe. Combine two cups rice with three cups water to a pot. Stir and bring to a boil. Once at a boil cover pot with a snug lid, turn the heat to low. Let simmer covered for 20 minutes. No peeking and no stirring or you may end up with mush. After 20 minutes remove the rice from the heat and fluff with a fork, let stand for a few minutes then serve.

Ingredients

Thai Green Curry Chicken Recipe

  • 2 chicken breast
  • 2-3 tbsp oil
  • 5 small Thai eggplants or 1 to 2 Japanese eggplants
  • 3 – 3.5 tbsp Mae Ploy green curry paste
  • 1 can Mae Ploy coconut milk
  • small can bamboo shoots (drained)
  • 1 tbsp fish sauce
  • 1-2 tbsp brown sugar
  • bay leaves
  • ¼ cup fresh Thai sweet basil

 

Method

1 Cut two chicken breast into bite sized pieces. Heat a bit of oil in a pan until hot; add the chicken. Cook till done then remove from the pan.

2 Japanese eggplant is readily available at my local grocery store, it taste great so I don’t bother trying to hunt down Thai eggplants. While the chicken is cooking cut up the eggplant. I enjoy eggplant so I add more than the average person might; there is no science here only preference. Add a bit of oil to a pan, once hot add the eggplant. Once the oil is absorbed add a bit of water to the pan for the eggplant to absorb. This helps the eggplant cook through to the middle.

3 How much Thai green curry paste is used is personal preference, the more used the stronger the flavor and the hotter the sauce will be. I like a stronger flavor and a bit of heat so I use 3.5 tbsp, sometimes more. Add the Thai green curry paste to a hot pan and add half a can of coconut milk. Bring to a slight boil, stir in the remainder of the coconut milk, the fish sauce and the brown sugar.

4 Add in the cooked chicken, eggplant and bamboo shoots. Add a few bay leaves and the fresh Thai basil. There have been times when I have not had any basil on hand so I skipped it. It is not essential but it does enhance the flavor. Let the curry sauce simmer on low while the flavors meld.

5 Serve with the rice.

Final Thought, May Ploy also carries Thai Red Curry Paste, Thai Panang Curry Paste and Thai Yellow Curry Paste. Red Curry Paste works well with beef.

My next mission is to try the Mae Ploy Pad Thai Sauce and Rice Stick Noodles to see if I can replicate another favorite and very popular Thai dish, Pad Thai.

Greek Shrimp Saganaki with Tomato and Feta

Today I was searching for some inspiration on what to make for dinner. Coming off of the Korean dish from the other night I had to come up with something a little tamer. Searching through some of the cookbooks that my grandmother recently gave me I found a copy of The New Greek Cuisine. Immediately I found a nice recipe with some simple ingredients that I already had. Shrimp Saganaki with Tomato and Feta is an easy dish that can be put together in no time and I’m sure everyone in the family will enjoy it.

It took me no time to cook this dish and the best part was that I already had all the ingredients in my kitchen.

Ingredients

Shrimp Saganaki with Tomato and Feta

  • ¼ cup extra virgin olive oil, plus oil for drizzling
  • ½ cup finely diced onion
  • Coarse salt and freshly ground pepper
  • 3 garlic cloves, minced
  • 1 teaspoon dried Greek oregano, plus oregano for sprinkling
  • 1 cup diced peeled, seeded ripe tomatoes
  • ¼ cup dry white wine
  • one 28 ounce can chopped tomatoes with juice
  • ¼ cup chopped fresh flat-leaf parsley
  • 1 ½ pounds medium shrimp, peeled and deveined, tails left on
  • ¾ cup diced feta cheese

Method

1 Heat the oven to 450F
2 Slap your sauté pan over medium heat and add ¼ cup of olive oil. Throw in the onion and season with a pinch of salt. Let the onions sweat out for about 8 minutes or until they are translucent until you add the garlic. Cook the onion/garlic mixture for about another minute before adding the oregano and another splash of salt. Incorporate the diced tomatoes and simmer for 3 minutes.
3 Raise the heat on your cook top to medium high heat and add the canned tomatoes. Bring to a simmer for about 6 minutes and then incorporate the parsley.
4 Spoon enough of the tomato sauce in a 9X14 inch-baking pan to cover the bottom. Arrange the shrimp on the bottom of the pan, place one shrimp in the center and work your way around the pan in a circle until all the shrimp are in the pan. Cover the shrimp with the rest of the tomato sauce; sprinkle the feta over the mixture and drizzle with olive oil. Add oregano to taste and bake in a 450 degree oven for about 20 minutes or until the feta is golden brown.

Spicy Kimchee, Pork, and Tofu Braise

It’s been a few months since my last trip to Korea so lately I’ve been craving some kimchee. Having visited “The Land of the Morning Calm” many times I can tell you the street food in Korea is something not to be missed. There is nothing like sitting in a tent while it’s 5 degrees outside downing soju with close allies. I decided to give my good friend Son a call to see if he would share a few pointers on the art and history of Korean cooking. Son is originally from South Korea (ROK) so I thought he’d be a great resource. He and his wife Mary suggested I try one of the recipes in the Simply Ming Cookbook by Ming Tsai that they bought a few years back. Mary told me that some of the Korean recipes in the book are a little Americanized but still retain most of the original appeal I’m craving. Let’s face it, no matter how many times I’ve enjoyed Ddukboki—basic rice cakes with hot pepper and other spices—under a tent in Apgujeong—a trendy neighborhood in Seoul—I’ve gotta dish up something a little more tame if the family is going to try it out. After looking through the recipes I decided on the Spicy Kimchee, Pork, and Tofu Braise.

Spicy Kimchee, Pork, and Tofu Braise

This is a great dish to make if you have a Wok in your kitchen that doesn’t get much use or you can use a heavy sauté pan. I decided to add a side of traditional kimchee, from a jar, and serve the dish over rice.

Ingredients

Cucumber-Kimchee

  • 1 tablespoon grapeseed or canola oil
  • 1 pound ground pork
  • 1 pound baby spinach, rinsed and dried
  • 1 pound firm tofu, cut into ½ inch dice
  • 2 cups Cucumber Kimchee
  • Kosher salt and freshly ground black pepper to taste
  • Sesame oil, for drizzling

Method

1 Make sure your wok or sauté pan is hot and coat with the oil. Heat the ground pork for about 5 minutes or until it’s thoroughly cooked.
2 Toss the tofu, spinach, and cucumber kimchee in the wok with the pork and season with salt and pepper. You can cook the veggies all the way through or leave them a little crispy like I did.

3 Sprinkle the sesame oil over the dish just before serving and enjoy.

Salmon is an easy to prepare fish that always taste delicious when prepared with fresh ingredients, by the home cook. that any home cook can enjoy.

Salmon is one of the healthiest and delicious fish dishes that the home cook can enjoy. It’s a tasty, versatile, and healthy option as long as you choose the right species at your local grocery or fish store.
You should always angle to get the freshest available wild salmon over the commercial farmed raised offerings. Why you may ask? Omega-3s are deposited deeper in the fat tissue of a wild salmon over the commercial farm raised salmon that may be pumped with all sorts of hormones to expedite the growth process. Wild Salmon on the other hand consume a more natural diet in their own habitat which helps them build the much needed fat stores required for their long journey upstream to spawn. There’s a lot of omega-3s in those naturally developed fat stores.

Here is a quick look at the various salmon species that may be available in the fresh or frozen seafood section at your local grocery. Take some time discovering which species best suites your pallet and recipe preferences.
The largest, and some would say most flavorful, wild Salmon is the Chinook or King Salmon—Oncorhynchus tshawytscha. With the highest concentration of omega-3, this salmon is often described as being the most delicious Salmon available today. Sockeye or Red Salmon is another species available in the Pacific—Oncorhynchus nerka. Sockeye feed on zooplankton their entire life, which is responsible for their striking hue and low concentrations of mercury. Coho or Silver Salmon-Oncorhynchus kisutch is larger and somewhat milder than Sockeye and retains its orange-red color during most preparations. Another Pacific Salmon prized for its mild delicate flavor and medium red flesh is the Keta or Chum Salmon—Oncorhynchus keta. Some cooks may also be familiar with two other species of Salmon, Pink and Atlantic. Pink Salmon is usually sold in cans, while Atlantic are generally raised in pens in large volume. Choose the species that best suites your tastes and budget—prices can vary widely depending on time of year and fresh vs. frozen.

Here’s a peek at my Lime and Honey Grilled Wild Salmon. This is simply one of my favorite Salmon Grilling recipes because it’s so quick and easy to prepare and the marinade really brightens up the flavor of the Salmon.

  • 1/3 Cup Fresh Squeezed Lemon Juice
  • 1/3 Cup Olive Oil
  • 1/3 Cup Soy Sauce
  • 1 Tablespoon finely chopped garlic
  • 1 Tablespoon finely chopped rosemary

Method

1 Simply add all the ingredients to a mixing bowl and marinade your Salmon for 1 hour. It’s best not to marinade for more than an hour because the citrus will start to break down the flesh of the Salmon

2 Fire up your grill and sear your Salmon flesh side down on a hot grill. Leave the Salmon on long enough for the meat to sear—once you’ve got those lip smacking grill marks it’s time to flip.

3 Cook another 8 to 10 minutes or until the skin slides right off the Salmon.

4 Optional, during the final two minutes, sprinkle the zest of the lemon on the salmon.

Spiced Basmati Rice

A recent experience while visiting my wife’s clan in Atlanta inspired me to seek out an authentic Indian rice recipe. Margaret, Heather’s grandmother, had an Indian night where she and a longtime family friend cooked some traditional dishes. Amita is from northwest India and a pretty good cook. Watching Amita and Margaret in the kitchen was so entertaining. It was like being on the set of a cooking show with Margaret as the host and Amita the ‘guest’ chef. Rob and I sat at the kitchen counter drinking a few Kingfisher beers while Amita made a spicy chicken with basmati rice dish that really won me over. Having forgotten to ask for the recipe, I went to the library in search of an easy to follow Indian cookbook and found Madhur Jaffrey Indian Cooking. It’s a pleasant book with easy to follow directions. I decided to make this Spiced Basmati Rice recipe and serve it with my grilled chicken recipe.

Spiced Basmati Rice

Ingredients

Basmati Rice

  • 15 floz Basmati Rice
  • 2 pints water
  • 3 tablespoons vegetable oil
  • 2 ounces onion, peeled and finely chopped
  • ½ fresh, hot green chili, finely chopped
  • ½ teaspoon peeled, very finely chopped garlic
  • ½ teaspoon Garam Masala
  • 1 teaspoon salt
  • 1 pint chicken stock

Method

1 Make sure you inspect the rice thoroughly before cooking. This is something I do more often after seeing how rice is dried during a trip to the Philippines. Wash the rice several times until the water runs almost clear. Soak in 2 pints of water for 30 minutes.

2 Add the oil to a heavy pan on medium heat. Drop in the onion once the pan is hot. Let the onions caramelize just a bit and add the green chili, rice, garlic, garam masala and salt. The mixture should be stirred 3-4 minutes to get the rice well covered in oil. This is a good time to enjoy a cold Kingisher. Add the chicken stock; bring to a boil, and cover. Cook 25 minutes on low heat.

Simple Banana Pancake Recipe

Simple Banana Pancake Recipe (serves lots!)

Ingredients

2 cups plain flour
4 medium eggs (separated)
1 cup milk
1 cup of pureed banana
2 dollops of butter
1 tsp of vanilla extract
pinch of cinnamon

Method

1 This quick banana pancake recipe is made in minutes. Simply mix the egg whites until they are stiff and place in the fridge.

2 In a bowl mix together the milk, egg yolks and flour, then add the banana and mix again well. Add a pinch of cinnamon, vanilla and mix well.

3 Get a large frying pan / skillet and melt a knob of butter ensuring pan is coated well.

4 Fold 4 tablespoons of the egg white into 1 cup of pancake batter and then pour into the frying pan. Cook for approximately 2-3 minutes each side or until golden brown and repeat process until all the batter mix has been used. Simple and delicious!

Waldorf Salad Recipe

Waldorf Salad Recipe (serves 4)

Ingredients

1 fresh lettuce (washed & dried)
2-3 sticks of celery (cubed)
2 green apples (peeled & cubed)
Juice of 1 lemon
5 tablespoons of low fat mayonnaise
Salt and pepper
1 handful of chopped walnuts

Method

1. Mix the apples and celery together in a bowl then pour over the lemon juice, season with salt and pepper

2. Just before serving, mix in the mayonnaise and half of the chopped walnuts.

3. Arrange lettuce leaves on each plate and then place the apple, celery and walnut mixture in the center of it

4. To finish off sprinkle remaining walnuts over the top. Delicious and quick.

Greek Salad Recipe (serves 4)

Ingredients

1/2 cucumber (cut into 2 inch sticks)
4  tomatoes (quartered)
1 green pepper (sliced)
1 small onion (diced)
8oz feta cheese
10 black olives
3 tbsp olive oil
1 tbsp white wine vinegar
salt and pepper

Method

1. Arrange cucumber, tomatoes, onion, pepper in a salad bowl.

2. For the dressing, whisk the olive oil and salt & pepper together, slowly pouring in the white wine vinegar, mix again.

3. Pour dressing over the vegetables and toss gently to coat.

4. Crumble the feta cheese and sprinkle over the salad, garnish with the black olives. Serve and enjoy.

Spinach Omelette Recipe

Ingredients

1lb fresh spinach
1/2 onion (diced small)
4 large eggs
salt and pepper
2 dollops of butter
mushrooms (optional)

Method

1. Wash & blanch spinach in salted boiling water for approx 5 mins. Drain and squeeze dry.

2. Melt 1 dollop of butter in frying pan on medium heat and fry the onions and optional mushrooms till golden, remove and mix with the spinach, season with salt and pepper.

3. Beat eggs in a small bowl. Melt remaining butter on medium heat in the frying pan. Pour in eggs, stir them with a fork as they cook for the first minute.

4. Lower the heat and add the spinach to the omelette, stir twice then leave mix to cook and set. Serve and enjoy.

8oz fresh buffalo mozzarella (cut into small pieces)
12 oz small fresh cherry tomatoes
2 garlic cloves (finely chopped)
1 handful fresh basil leaves

1. To make the dressing first blend mustard, oil, vinegar and torn up basil together in a large bowl.

3 tomatoes
2 oz fresh mozzarella sliced

Italian Garlic Bread Recipe (serves 4)

Ingredients

1 ciabatta loaf (cut into slices)
4 tbsp soft butter
3 cloves crushed garlic
1 tsp dried oregano
1 tsp dried basil

Method

1. Preheat oven to 400 degrees

2. In a bowl mix the crushed garlic with the oregano, basil and butter. Once mixed, spread a layer of this garlic butter on each ciabatta slice until all mixture is used up

3. Place on a baking tray in the oven for around 10 minutes or until each slice is toasted, golden and crisp. Delicious!

Bruschetta Recipe

Bruschetta Recipe (serves 2-3)

Ingredients

1 onion
2 tomatoes
1/4 cup chopped fresh basil
1 clove crushed garlic
4 tablespoons olive oil
2 tablespoons vinegar
4 slices of Italian bread cut 1/2 inch thick
salt & pepper to taste

Method

1. Finely chop the tomato and onion.

2. In a bowl mix the tomato, onion, garlic, basil, 3 tablespoons of olive oil and vinegar. Add salt and pepper to taste.

3. Place the slices of Italian bread in a broiler or toaster oven until lightly browned. Remove and brush the remaining olive oil on one side of the bread.

4. Place the bread back in the broiler or toaster oven until the bread becomes crisp and crunchy. Remove and add the tomato mixture on top of each slice.

5. Serve either warm or cold.

4 slices of Gouda cheese
4 slices of ham
4 pineapple rings
1 tsp paprika pepper
4 slices of white or brown bread

1. These quick tropical sandwiches are a breeze to make, they are best served hot.

2. Toast slices of bread and spread with butter, cover with ham pineapple and cheese.

3. Brown under a preheated grill until the cheese begins to melt or bubble.

4. Serve garnished with paprika pepper and parsley if you wish.

Beef and Broccoli Recipe – Stir Fry

Beef and Broccoli  Recipe – Stir Fry(serves 4)

Ingredients

3/4 lb sirloin or rump steak (cut into short strips)
1 lb fresh broccoli
4 spring onions (finely sliced)
2 cloves of garlic (chopped finely)
1 red pepper (sliced)
2tbsp sunflower oil
3tbsp light soy sauce
3tbsp oyster sauce
Egg noodles or rice to serve

Method

1. Boil water in a large pan, add broccoli and simmer for 3 minutes, then drain.

2. Heat oil in a large frying pan or wok. Add steak and stir fry on a high heat for approx 3 minutes. Push steak to the side of the pan/wok add spring onions, garlic, broccoli and stir fry for 2 minutes.

3. Turn the heat down add the soy and oyster sauce and stir fry for 2 minutes, ensure the steak is well coated. Serve with either egg noodles or rice. Quick yet tasty.

Smoked Salmon Mini Quiches Recipe

Smoked Salmon Mini Quiches Recipe (makes approx 22)

Ingredients

20-23 mini pastery shells
1 egg (plus 2 egg yolks)
1 1/4 cup whipping cream
3 oz  finely chopped smoked salmon
1 large tbs chopped fresh chives
1 pinch of cayenne pepper (optional)

Method

1. To make these smoked salmon mini quiches you must first of all preheat the oven to 400 degrees.

2. Place the ready made pastry cases onto a baking tray and place a little salmon in each case.

3. Sprinkle chives in each of the pastry cases. Mix the egg / egg yolks, whipping cream, cayenne pepper together and divided the mixture into each case.

4. Bake in the oven for around 7-10 minutes. Either serve immediately or allow to cool then place in the fridge until required.

4 large fresh chicken portions
1 tbsp dried rosemary
1 tbsp grated lemon rind
2 tbsp extra virgin olive oil

lemon wedges (optional)

Method

1. This simple chicken and rosemary cooking recipe is very easy to make. Firstly preheat your oven to around 400 degrees.

2. Sprinkle salt over all the chicken portions and rub in. Place chicken in a shallow ovenproof dish then brush with olive oil.

3. Sprinkle the dried rosemary and lemon rind over all the chicken portions.

4. Bake in the oven for around 35-40 minutes until chicken is cooked and juices run clear.

5. Serve with lemon wedges should you require. Simple yet very tasty indeed.

Roasted Butternut Squash Recipe

Roasted Butternut Squash Recipe (Serves 5-6)

Ingredients

butternut squash (approximately 2 small)
2 red onions, sliced into thin wedges
4 tablespoons olive oil
4 sprigs fresh rosemary
salt and pepper

Method

1 Preheat the oven to 400F.

2 Halve the butternut squash and remove the seeds in the centre. Peel the squash and chop the flesh into small cubes, place in a large bowl.

3 Add the chopped red onion to the squash, along with the olive oil and then season lightly with salt and pepper.

4 Transfer the vegetable onto a baking sheet and place the rosemary sprigs with them. Roast in the oven for around 30 – 40 minutes until the squash is nice and tender and it is beginning to turn golden brown at the edges.

5 Serve once ready.

8 oz’s whole organic mushrooms
2 crushed garlic cloves
4 tbsp’s Worcestershire sauce

3 tbsp’s butter

1. To make this sauteed garlic mushrooms recipe simply chop the mushrooms first.

2. Melt the butter in a large frying pan on a medium heat, add the garlic and Worcestershire sauce.

3. Add the mushrooms to the pan and cook on a low to medium heat for 10 – 13 minutes. This recipe is perfect for a side dish.

5 cloves crushed garlic
1/4 cup lemon juice

1. This free pasta recipe is great for everyone. Simply cook the spaghetti according to package instructions.

2. Whilst the pasta is cooking, melt the butter in a large frying pan over a medium heat, add the olive oil and crushed garlic and cook for 1 minute.

3. Next just add the salt, pepper and lemon juice then bring the pan up to boiling point and remove from the heat. Drain the cooked pasta, pour the lemon and garlic mixture over the hot pasta and toss well in.

4. Serve the pasta in bowls and top each one off with chopped parsley. Scrummy!

Ingredients
18 oz pack whole grain spaghetti
1 tbsp olive oil
2 crushed garlic cloves
1 red / 1 green chilli, chopped finely
handful freshly chopped parsley

Method
1. To make this chilli pasta recipe just heat the olive oil in a large frying pan, add the onions, garlic and chilli and cook for 3 minutes on a medium heat, take pan off heat.

2. Cook spaghetti as per instructions, drain then add the chilli / onion / garlic mix to the spaghetti, throw in the freshly chopped parsley. Mix well and serve immediately. Hot and tasty pasta!

Soup Can Be a Complete One Dish Meal

Soup is not something you serve before the main course. It can sometimes be the main course. Here are a few quick and easy soup recipes you can try out.

The first is spicy clam soup and to make that, you need to know the ingredients. These include chopped onions, minced parsley, salt and pepper, strips of orange peel, red pepper flakes and the clams.

You begin by putting the clams in a large saucepan and bring it to a boil. Once the clams open, reduce the heat and discard those that did not. Now add the other ingredients and boil for 3 minutes. Divide the clam into 4 bowls and then top it off with orange peel and red pepper before serving.

A personal favorite is creamy bacon mushroom soup. To make this you can open a can of Campbell soup, boil and then serve. But if you want to make this from scratch, be sure you have bacon strips, some onions, minced garlic cloves, heavy whipping cream, chicken broth, Swiss cheese, chicken broth, corn starch, pepper, salt and water.

First, cook the bacon until it is crisp and then drain the excess oil using a paper towel. Sauté the mushrooms, onions and garlic while stirring the broth and cream. Gradually stir until the cheese is melted.

In a small bowl, mix water, cornstarch and pepper until it is smooth. When everything is ready, mix it together until it is thickened and then serve.

Craving for chicken? Well you can also make chicken and tortilla soup. To do that, you will need some skinless chicken breasts, olive oil, minced garlic, ground cumin, a can of chicken broth, frozen corn kernels, chopped onions, chili powder, lemon juice, salsa, tortilla chips and cheese.

To make chicken and tortilla soup, you have to sauté the chicken in oil for 5 minutes and then add the other ingredients. Afterwards, reduce the heat to low and simmer for about twenty to thirty minutes. Before you serve it, break some tortilla chips and put a few into each bowl. Pour the soup over the chips and then serve. If you want to add more flavoring, add cheese or sour cream.

Another great recipe you can try out is corn chowder soup. For this, you will need fat free margarine, diced carrots, all purpose flour, skim milk, frozen kernel corn, cream style corn, chicken granules, dried thyme leaves, black pepper and bacon bits.

The first step is to melt margarine in a large pot over medium high heat. When ready, add onions and carrots for about 5 minutes until these become soft.

Now sprinkle the sautéed vegetables with flour, stirring to coat. Add milk, frozen corn, cream-style corn, bouillon granules, thyme and black pepper then simmer over medium heat for 3 minutes. Reduce heat to low, cover and cook for 10 to 20 minutes. While the soup is heating, toast the bacon bits in a small nonstick sauté pan until crisp and add them to the soup.

Soup is great to have for any meal. It warms your stomach and makes you feel full after just a few minutes. So try out the different quick and easy soup recipes and see which one is your favorite. Just cut down on the ingredients if you are only serving yourself.

Make Pizza at Home and Make Takeout a Distant Memory

Who has not eaten a pizza? Living in the US, you surely have but did you ever wonder how it is made? Well there are quick and easy recipes that you can make. The only you can do it is by having the right ingredients and equipment.

There are 5 basic things that make up a pizza namely the dough, tomato paste, cheese, the toppings and olive oil. The first one which is the though can be purchased from the supermarket and these come in different sizes. But if you prefer to do this by hand, well that is a different story because for that, you will flour, dry yeast, brown sugar, salt and some hot water.

Since we want to keep things simple, let’s just work with the premade dough. One thing that can change when you make a pizza is your choice of toppings. You can use sausage, ham, mushrooms, anchovies, green pepper and a lot more. So you get the idea, lets work with ham and cheese pizza.

If there is no tomato sauce available, an alternative will be to use spaghetti sauce which also tastes good.

Once the premade dough is laid out on the kitchen table, we get a kitchen knife and spread tomato paste all over the surface of the dough. Next, we put in pieces of sliced ham and then sprinkle cheese all over it.

The last thing to do before we can eat the pizza is to put this in the oven. Before you put it inside, be sure to preheat the oven to 350 Fahrenheit or 180 degrees Celsius and spray the oven tray with olive oil to prevent the pizza from sticking to the surface. That way, you can have your warm pizza ready for consumption after 5 to 10 minutes.

But what if you don’t have an oven? Can you still make a pizza? The answer is yes because you can also make it happen using your microwave or a griller. The advantage of using this equipment compared to an oven is that it is much faster to cook.

For those who want to impress their guests, forget making ham and cheese pizza. You should try instead making something that Shakey’s or Pizza Hut offers like Pineapple pizza. The ingredients for making this is similar to ham and cheese pizza. The only thing you added is the pineapple chunks.

When you put toppings on pizza, make sure to spread it over the pizza so everyone will be able to taste the toppings. Cut eat evenly and since it is still hot the second you take it out of the oven, wait two to five minutes first before serving it.

A word of advice for those who love pizza is to watch it at all times so it does not get burned. Keep your kids a safety distance away from the oven so they don’t get hurt.

There are other easy and quick recipes you can try out when making a pizza. You can look for these in cookbooks or online but if you want to experiment, go ahead and do it because the preparation phase is the same regardless of what you are planning to make. If you are too lazy to make it, just buy one already made in the grocery then heat it in the microwave.

Pasta for Dinner

Do you want to make a quick and easy recipe using pasta? Well there is and one thing you can make that is rich in carbohydrates is carbonara.

But what is carbonara? Basically it is spaghetti using white sauce. The core ingredients for this quick and easy recipe include a mixture of cheeses, eggs and freshly cracked black pepper. You can add cream, bacon, mushrooms and bacon to make it tastier.

There are two ways to make this dish. There is the Italian and the American version even if both use the same ingredients. 

If you want to make the Italian version, make sure that you are using long pasta such as spaghetti, linguini, or fettucini. To make the sauce, be sure to mix pancetta and garlic together with butter and olive in a separate pan before setting this aside. You should all throw in some eggs and cracked better that are beaten in a bowl along with some cheese and pecorino.

When the pasta is ready, be sure to drain it and then save some of the water so you can use it to mix with the pasta and the pancetta. After several minutes, you can put this in a plate and then serve.

For those who want to try the American version, cook the pasta while frying pancetta or bacon in a pan with garlic and thinly sliced shallots. Make sure the pan is partially drained to remove some of the fat before adding heavy cream.

In a separate bowl, make the sauce using eggs, pepper and cheese. When it is ready, mix this with the pasta before being served.

Since we are talking about pasta, there are other dishes you can make using pasta and the simplest one is spaghetti.

For that, all you have to do is buy spaghetti sauce and then mix this with minced pork and sausages. Other alternatives to this include meatballs, tuna and a few other things so experiment a little so eating pasta is different each time you make it.

When this is being heated in a pan, boil the pasta while throwing in a few pieces of salt. Get a small piece off pasta from time to time to be sure that it is not undercooked before turning off the stove.

Once the pasta and the sauce is ready, mix it together or put one in a plate and the other in a bowl. That way, people have the choice to put as much sauce as they want. To make the pasta taste good, be sure to sprinkle some pepper and some cheese.

If these two dishes are too easy for you, try making lasagna. How to make this dish is very similar to spaghetti. The only differences is that this is done in layers since you are putting pasta and sauce alternately over a 10-by-18-inch baking dish until it reaches the top. You also bake it in the oven for several minutes before serving.

Pasta is one of the quickest and easiest recipes to make given that you just need to do some cutting, boiling and frying before putting everything together. Aside from following recipes that can be found in cookbooks or online, try coming up with a few concoctions of your own and share this with other people.

How to Make Homemade Donuts

Crispy Crème and Dunkin Donuts are two of the most popular donut brands in the market. If you think that how they do it is impossible to make, think again because here are some quick and easy donut recipes which you can try out at home.

All donuts are made the same way. The main ingredients include flour, sugar, milk, oil, eggs and a vanilla. When you have all these ingredients ready, mix everything together for about 2 minutes except for the oil that will be used later on.

Now make three long thick donut strips and then make then like a donut shape and connect both sides together. Put the oil on a medium sized pan and set this either to medium or medium high.

Look at the pan and slowly put in one donut at a time. Bake this for about 7 minutes until it is gold then bring it out and cool it for a bit before serving.

But that is just a plain donut. What if you want to make a chocolate or strawberry donut? To do that, you can melt a block of chocolate or use syrup and then spread this over the top of the donut. To make the syrup, mix together some butter, vanilla extract and butter then heat it until the texture becomes creamy. If you want to add nuts or candy sprinkles, knock yourself out.

There is another way to make a donut. To do that, you flatten each biscuit after mixing all the ingredients and then making a hole in the center using a small cookie cutter.

When the cookie is ready, plane the outer ring and the center in a deep fryer and cook until it is golden brown. Remove it after several minutes and place this over some paper towels to dry off the excess oil. Now coat the donuts with whatever flavor and toppings you like then serve.

The nice thing about making donuts this way is that you get to use everything. Because you placed the outer ring and the center in the deep fryer, you have not only made donuts but also munchkins which are great to eat.

Aside from circular shape donuts or those with a hole, you can also these goodies with filling inside and those that are shaped like a rectangle. If you want to put flavoring, make sure you don’t remove the center. As for a different shape, just make it into the intended form.

After making a few donuts, you will realize that this is so easy to make that anyone can do it at home. If what you made doesn’t taste like those you buy from the store, buy a box and then try to replicate the taste until you get it right.

Making donuts is easy and if you have the time, you can probably sell these to a bakeshop and earn some money. That is probably the best thing to do right now especially during the recession when a lot of people don’t have work and you still have to earn a living.

If you do decide to go into business, make sure you practice effective quality control and price your goods at a reasonable price. If you don’t, the shop where you could be selling your stuff will accept someone who is giving a better offer.

But if you don’t want to sell your donuts, that’s okay because you get to enjoy serving a different one each time after practicing the different quick and easy donut recipes.

Desserts

the foodie reviewAfter eating the main course, it is always nice to end the meal with some desserts. You can save ice cream or coffee or you can do something better by serving other quick and easy dessert recipes.

The first one is called cherry chocolate bark. The ingredients that you will need are a bag of semisweet chocolate chips and crushed cherry flavored candy canes. When you have the ingredients, line a 9×13 inch baking pan with aluminum foil.

Now melt the chocolate chips in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, until smooth, 1 to 3 minutes. Don’t make the mistake of overheating the chocolate because you could burn it.

Using a spatula, quickly spread the melted chocolate evenly in the prepared pan until the bottom of the pan is covered. Sprinkle the crushed candy evenly over the chocolate, and pat lightly with a clean spatula to help the candy settle into the chocolate. Put the pan in the freezer for half an hour to cool then remove the pan and remove the foil then serve. 

A lot of people can’t resist eating a cheesecake. To do that, you will need crushed graham crackers, melted butter, cream cheese, white sugar, milk, eggs sour cream, vanilla extract and all purpose flour.

Preheat the oven to 350 degrees because you will need this to cook the cake that will be placed in a 9 inch spring from pan.

Using a medium bowl, mix the mix graham cracker crumbs with melted butter then press this into the bottom of the pan.

In a larger bowl, mix the cream cheese with sugar until it is smooth then blend in milk and eggs so the mixture will incorporate. Now mix sour cream, vanilla and flour until it is smooth then pour this into the prepared crust.

Bake this for a little over an hour and then let it cool in inside the oven for about 5 to 6 hours closed as this prevents cracking. Then transfer to the refrigerator to chill until it is ready to be served.

Still want more chocolate desserts? Well here is another and this one is called Peppermint Bark. This is very similar to the cherry chocolate bark and the only difference is that you will be adding peppermint candies and white chocolate to the recipe.

You start by lightly greasing a 9×9 inch pan with waxed paper, smoothing out wrinkles then setting it aside.

For this recipe, you will need to use the double broiler. The first time you will use it is to melt  semisweet chocolate and a teaspoon of canola oil. When the chocolate is melted, stir a quarter teaspoon of the peppermint extract.

Then you pour the melted chocolate into the prepared pan, and spread evenly over the bottom of the pan. Sprinkle half of the crushed peppermints over the chocolate layer then refrigerate until completely hardened for about 1 hour.

The second time you will use the double broiler is to melt white chocolate. Both times, you should stir frequently and scrape down the sides with a rubber spatula to avoid scorching.

Once it is melted, pour the white chocolate mixture over the semisweet layer and spread evenly. Sprinkle crushed candy on top and refrigerate until it hardens. Remove from then pan and break into small pieces before serving.

There are a lot of quick and easy recipes to serve as dessert at home. Do some research and then serve it with the rest of the household.

Cookie Recipes

If you feel bored and want to make something in your kitchen, one thing you make that is quick and easy are cookies. To give you an idea, here are a few recipes that are worth baking.

The first thing you can make is peanut cookies. For that, you will need some flour, baking power, white and brown sugar, eggs mil, vegetable oil and of course, the peanuts.

While you are preparing the ingredients, you can already preheat the over to about 300 degrees Fahrenheit or 150 degrees Celsius. Now get a large bowl and then add all the other ingredients except the peanuts with a wooden spoon until you get a brown paste as a result.

Next, pour in the peanuts and mix this with the paste this time using your hands. Be sure you don’t overdo it because you don’t want the dough to become tough.

Now grab a small amount of dough and roll it into a small ball using your palm. After making one, do another until you are able to fill up the entire tray. Be sure to leave at least inch or two distance between each cookie so the dough can expand without compromising the nearby cookies while it is being cooked.

Once the tray is full, put it inside the oven and bake it for about 20 to 25 minutes. Remove it after and then sprinkle some powdered sugar then let it cool for a while before serving.

Another quick and easy cookie recipe that is a favorite is chocolate chip cookies. Unlike the first recipe, you have to mix some ingredients in one bowl first before mixing it with the rest.

With a medium bowl, you mix flour, salt and baking soda. With a bigger bowl, you mix shortening, brown and white sugar as well as pure vanilla. Don’t forget to add some eggs and mix it until it is completely combined.

When this is ready, you mix the content of the medium bowl with those in the larger bowl until you have a moderately thick cookie dough.

Now scoop the dough into a small bowl and then put this on the tray. Make sure each ball is at least an inch apart and then let it bake in the oven for 8 to 10 minutes. If after 8 minutes the cookies still look doughy, wait for two more minutes before bringing it out of the oven. Let it sit for 3 to 5 minutes before serving.

The nice thing about making cookies is that if you are not able to finish everything in one session, you can always put the rest in a cookie jar. Just remember to finish it as soon as possible because it tastes different after several days.

If you are having a hard time removing the cookies from the wax paper or tin foil, it will be handy to have a spatula. 

There are other great quick and easy recipes for cookies. You just need time to work on the kitchen and then have some fun.

If you are too lazy to make cookies, go and buy some from the store. When you take a bite, ask yourself how they made it and then try to replicate it. This is the best way to learn from those who make millions selling cookies all over the country.

Clone and Copycat Recipes

We used to eat out nearly every night of the week, but since we had our second child it has become much more difficult to enjoy a meal at a restaurant. We still get out to our favorite restaurants occasionally but we still crave our favorite foods daily. That is when I started poking around for my favorite dish at the Cheesecake Factory. I stumbled upon Todd Wilbur’s books Top Secret Restaurant Recipes. He has a slew of books detailing copycat and clone recipes from well known restaurants. These books are packed the recipe clones for many top restaurants most popular dishes. Most recently, I tried Cheesecake Factory’s Cajun Jambalaya Pasta. I had never ordered the dish at the restaurant before, but you can not go wrong with any dish at the Cheesecake Factory. Since Cheesecake Factory says it is their most popular dish I gave it a try. It was definately worth trying out, I made a few tweaks here and there but I don’t think I changed the overall concept of the meal. We will be having this again for dinner quite soon.
